Chicken Lettuce Salad

Ingredients
  Broiler fryer chicken 3 1⁄2 Pound
  Dry sherry 1⁄2 Cup (8 tbs)
  Soy sauce 1⁄2 Cup (8 tbs)
  Sugar 1 Teaspoon
  Peppers 1⁄4 Teaspoon
  Powdered ginger 1⁄4 Teaspoon
  Oil 3 Tablespoon
  Shredded lettuce 2 Cup (32 tbs)
  Diced celery 3⁄4 Cup (12 tbs)
  Bean sprouts 3⁄4 Cup (12 tbs)
  Sesame seeds 2 Tablespoon
  Blanched chopped almonds 1⁄2 Cup (8 tbs)
Directions

Cut the chicken from the bone and into bite-size pieces.
Marinate for 3 hours in a mixture of the sherry, soy sauce, sugar, chili peppers, and ginger.
Drain.
Heat the oil in a skillet; brown the chicken in it; cover and cook over low heat 10 minutes, or until chicken is tender.
Cool.
Mix together the lettuce, celery, bean sprouts, sesame seeds, almonds, and chicken.
Taste for seasoning.
