Minted Mixed Vegetable Salad

Ingredients
  Croutons 1 1⁄2 Cup (24 tbs)
  Olive oil 6 Tablespoon
  Cherry tomatoes 3 Cup (48 tbs), halved
  Peeled diced cucumbers 3 Cup (48 tbs)
  Sliced radishes 1⁄2 Cup (8 tbs)
  Mint flakes 1 Tablespoon, crumbled
  Dried chives 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄8 Teaspoon
  Lemon juice 1 1⁄2 Teaspoon
  Finely grated lemon rind 1⁄2 Teaspoon
Directions

Combine croutons with oil. Toss until well coated.
Set aside.
Combine remaining ingredients in salad bowl.
Add croutons; toss gently.
Serve with lamb or beef.
