Gelatin Rice Salad

Gelatin Rice Salad is best served on crisp lettuce. This Gelatin Rice Salad combines the richness of gelatin with that of pineapple and whipped cream. Try adding this Gelatin Rice Salad to your party menu next time.
Ingredients
  Raspberry gelatin/Lime gelatin 3 Ounce
  Boiling water 1 Cup (16 tbs)
  Cooked rice 2 Cup (32 tbs), drained and sweetened
  Crushed pineapple 3⁄4 Can (7.5 oz), drained (1 small can)
  Whipped cream 1 Cup (16 tbs)
Directions

Dissolve gelatin in boiling water.
Add rice.
Chill for 2 to 3 hours so rice will take up flavor of the gelatin.
Blend pineapple and whipped cream into gelatin mixture.
Serve on crisp lettuce.
