Gelatin Rice Salad is best served on crisp lettuce. This Gelatin Rice Salad combines the richness of gelatin with that of pineapple and whipped cream. Try adding this Gelatin Rice Salad to your party menu next time.
|Raspberry gelatin/Lime gelatin||3 Ounce|
|Boiling water||1 Cup (16 tbs)|
|Cooked rice||2 Cup (32 tbs), drained and sweetened|
|Crushed pineapple||3⁄4 Can (7.5 oz), drained (1 small can)|
|Whipped cream||1 Cup (16 tbs)|
Dissolve gelatin in boiling water.
Chill for 2 to 3 hours so rice will take up flavor of the gelatin.
Blend pineapple and whipped cream into gelatin mixture.
Serve on crisp lettuce.
