Fresh Spinach And Rice Salad Bowl
|Fresh spinach||1⁄2 Pound|
|Onion||1 Small, thinly sliced|
|Thinly sliced celery||1⁄2 Cup (8 tbs)|
|Sliced radishes||1⁄4 Cup (4 tbs)|
|Hard cooked eggs||3 , sliced|
|Cooked cold rice||1 1⁄2 Cup (24 tbs)|
Wash spinach thoroughly.
Break off stems; measure 1 quart.
Tear leaves into bite sized pieces if too large.
Shake spinach in a towel to dry.
Arrange attractively with other vegetables, eggs and rice in a salad bowl; season with salt and pepper.
Add lemon dressing when ready to serve.
