Cantaloupe Party Salad
|Unflavored gelatin||1 Tablespoon|
|Grapefruit juice||3⁄4 Cup (12 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Cantaloupe balls||2 Cup (32 tbs)|
|Cream cheese||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
Soften gelatin in 1/4 cup grapefruit juice; melt over hot water.
Add remaining grape fruit juice, salt, sugar, water and lemon juice.
Chill until mixture begins to thicken.
Fold in cantaloupe balls.
Oil 2 1/2 cup mold and 1 1/2 cup mold; fill each with canta loupe mixture.
Refrigerate until firm.
Un mold large salad onto serving plate.
Center small salad on top of larger one.
Garnish with cream cheese; serve with mayonnaise or fruit salad dressing.
