Gelatin Salad

Ingredients
  Unflavored gelatin 2 Tablespoon
  Cold water 1⁄2 Cup (8 tbs)
  Canned crushed pineapple 20 Ounce
  Sugar 1⁄2 Cup (8 tbs)
  Lemon 1 , juiced
  Pimento cheese 3⁄4 Cup (12 tbs), grated in long curls
  Whipped cream 1 Cup (16 tbs)
Directions

Dissolve gelatin in cold water.
Heat pineapple and sugar to boiling point; add lemon juice.
Remove from heat.
Add gelatin; stir until dissolved.
Cool until partially set; whip until light and fluffy.
Fold in cheese and whipped cream.
Let set until firm.
