Summer Garden Salad
|Granny smith apples||2 , cored and diced|
|Red potatoes||1⁄2 Pound, cooked and sliced|
|Frozen peas||1 Cup (16 tbs), thawed and drained|
|Plain yogurt||1 Cup (16 tbs)|
|Prepared horseradish||2 Teaspoon|
|Chopped mint/1 teaspoon dried mint leaves||1 Teaspoon|
Combine apples, potatoes and peas in medium-size bowl.
Combine yogurt, horseradish, mint and salt in small bowl; mix well.
Pour dressing over apple mixture; toss.
Cover and chill several hours.
Serve on lettuce.
