Easy Eggplant Salad

Ingredients
  Eggplant 1 , diced
  Basil 1⁄2 Teaspoon
  Parsley 1⁄2 Teaspoon, minced
  Onion 1 , sliced
  Water cress 1 Bunch (100 gm)
  Hard-cooked eggs 2 , quartered
  Ripe olives 1
Directions

Marinate eggplant in vinegar with herbs and onion for 2 hours.
Toss with water cress.
Garnish with eggs and olives.
Serve with favorite dressing.
