Easy Eggplant Salad
|Eggplant||1 , diced|
|Parsley||1⁄2 Teaspoon, minced|
|Onion||1 , sliced|
|Water cress||1 Bunch (100 gm)|
|Hard-cooked eggs||2 , quartered|
Marinate eggplant in vinegar with herbs and onion for 2 hours.
Toss with water cress.
Garnish with eggs and olives.
Serve with favorite dressing.
