Christmas Ring Salad
|Pineapple juice||1 Cup (16 tbs)|
|Cream cheese||1 Large|
|Lime gelatin||1 Tablespoon|
|Unflavored gelatin||2 Tablespoon|
|Head of lettuce||1|
|Stuffed olives||1 Large|
Bring pineapple juice and cream cheese to a boil.
Stir to dissolve cheese.
Prepare lime gelatin according to package directions.
Dis solve unflavored gelatin in cold water; add to lime gelatin mixture.
Blend gelatin mixture into cheese mixture until smooth.
Stir in pine apple and whole cherries.
Mold in 9 inch ring mold.
Chill until firm.
Unmold on a bed of lettuce; fill center with olives.
