Sweet Potato Salad With Honey Vinaigrette Dressing

Ingredients
  Sweet potatoes 3 Large
  Water 1 Cup (16 tbs)
  Onion 1 Medium, cut into thin rings
  Green pepper 1 , cut into thin strips
  Honey vinaigrette dressing 1 Tablespoon
Directions

Wash sweet potatoes.
Heat enough salted water to boiling- Water should cover sweet potatoes.
Add sweet potatoes in jackets; bring back to a boil.
Cover and cook 20 to 30 minutes, or until sweet potatoes are fork-tender.
Cool; halve potatoes lengthwise, then cut into 1/4-inch slices.
Combine sweet potato, onion and green pepper in large bowl.
Pour Honey Vinaigrette Dressing over it, tossing lightly to coat vegetables.
Cover and refrigerate 3 to 6 hours, or overnight.
Served chilled or at room temperature
