This recipe for a grilled goat cheese and seafood salad makes for a great and refreshing lunch for a summer party. Dressed with a mango lime dressing, this salad as a light yet flavorful taste with the sublteness of goat cheese. Garnished with fresh parley, it is a sure hit.
Ingredients
  Canned tuna 12 1⁄2 Ounce (Bumble Bee Albacore Chunk)
  Olives 2 Ounce, sliced (Choose Ripe Black Ones)
  Romaine lettuce head 1 , cut
  Grated lime rind 1 Teaspoon
  Lime 1⁄4 Cup (4 tbs)
  Walnut oil 2 Tablespoon
  Walnuts 1⁄2 Cup (8 tbs), toasted
  Goat cheese slices 4 , broiled
Directions

Drain artichokes and olives.
Combine artichokes, seafoods, olives and lime rind.
Stir in.juice and oil.
Chill for 1 or more:hours.
Arrange mixture on romaine.
Drizzle mango dressing overalkand serve remainder in a separate bowl.
Garnish with goat cheese and minced parsley.
