Banana Coconut Salad
|Lemon juice||1 Tablespoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Whipped cream||1⁄2 Cup (8 tbs)|
|Toasted coconut/Chopped nuts||1 Cup (16 tbs)|
Cut bananas lengthwise into halves and cross wise into halves.
To prevent discoloring, prepare just before serving; coat bananas immediately with lemon juice.
Combine mayonnaise and whipped cream.
Roll bananas in mayonnaise mixture, then in coconut or chopped nuts.
Serve on crisp salad greens.
