Creamy Cucumber Salad
|Unflavored gelatin||2 Tablespoon|
|Cold water||1 Cup (16 tbs)|
|Commercial creamy cucumber dressing||1 1⁄2 Cup (24 tbs)|
|Instant minced onion||1 Teaspoon|
|Dried dill weed||1 Teaspoon|
|Diced peeled cucumber||3 Cup (48 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
Sprinkle gelatin over water in a medium saucepan, let stand 5 minutes.
Heat mixture over low heat, stirring constantly, until gelatin dissolves.
Add dressing, onion, and dillweed to gelatin mixture, stirring well.
Chill until the consistency of unbeaten egg white.
Fold in cucumber and celery.
Pour mixture into a lightly oiled 5-cup mold.
Chill until firm.
Unmold salad onto a serving platter; garnish with lettuce and cherry tomato halves, if desired.
