Meal-In-One Salad

Ingredients
  Uncooked regular rice 1⁄2 Cup (8 tbs)
  Chicken-flavored bouillon granules 1⁄2 Teaspoon
  Dried basil 1⁄4 Teaspoon (Whole)
  Wheat bran 3⁄4 Cup (12 tbs)
  Thinly sliced celery 1⁄4 Cup (4 tbs)
  Sliced green onions 1⁄4 Cup (4 tbs)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Unsweetened apple juice 1⁄2 Cup (8 tbs)
  Cider vinegar 1⁄4 Cup (4 tbs)
  Lettuce leaves 5
  Boneless skinned cooked turkey breast 8 Ounce, thinly sliced and cut into 0.5-inch strips
  Grapefruit 1 Medium, peeled, sliced, and halved (Yellow Variety)
  Oranges 2 Medium, peeled and sliced
  Seedless red grapes 1⁄4 Cup (4 tbs), halved
Directions

Cook rice according to package directions, omitting salt, and adding bouillon granules and basil.
Let cool.
Add cereal, celery, green onions, and green pepper to rice, tossing well.
Chill.
Combine apple juice and vinegar; add half of juice mixture to rice mixture just before serving, tossing well.
Line a serving platter with lettuce leaves; spoon rice mixture into center of platter.
Arrange turkey strips around rice mixture.
Place grapefruit and orange slices around turkey.
Garnish with grapes around rice mixture.
Pour remaining dressing over turkey and fruit.
