|Unsweetened apple juice||1⁄2 Cup (8 tbs)|
|Cider vinegar||1⁄4 Cup (4 tbs)|
|Boneless skinned cooked turkey breast||8 Ounce, thinly sliced and cut into 0.5-inch strips|
|Grapefruit||1 Medium, peeled, sliced, and halved (Yellow Variety)|
|Oranges||2 Medium, peeled and sliced|
|Seedless red grapes||1⁄4 Cup (4 tbs), halved|
Cook rice according to package directions, omitting salt, and adding bouillon granules and basil.
Add cereal, celery, green onions, and green pepper to rice, tossing well.
Combine apple juice and vinegar; add half of juice mixture to rice mixture just before serving, tossing well.
Line a serving platter with lettuce leaves; spoon rice mixture into center of platter.
Arrange turkey strips around rice mixture.
Place grapefruit and orange slices around turkey.
Garnish with grapes around rice mixture.
Pour remaining dressing over turkey and fruit.
