Fruited Shrimp Salad
|Water||3 Cup (48 tbs)|
|Shrimp||1 Pound (Unpeeled)|
|Canned unsweetened pineapple tidbits||16 Ounce (Drained)|
|Canned mandarin oranges||11 Ounce (In Extra Light Syrup, Drained)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Reduced-calorie mayonnaise||3 Tablespoon (Reduced Calorie)|
|Lemon juice||1 1⁄2 Teaspoon|
Bring water to a boil, add shrimp, and cook 3 to 5 minutes.
Drain well, rinse with cold water.
Peel and devein shrimp.
Combine shrimp, pineapple, mandarin oranges, celery, mayonnaise, and lemon juice, tossing gently, chill.
Serve on lettuce leaves, if desired.
