Fruited Shrimp Salad

Ingredients
  Water 3 Cup (48 tbs)
  Shrimp 1 Pound (Unpeeled)
  Canned unsweetened pineapple tidbits 16 Ounce (Drained)
  Canned mandarin oranges 11 Ounce (In Extra Light Syrup, Drained)
  Chopped celery 1⁄2 Cup (8 tbs)
  Reduced-calorie mayonnaise 3 Tablespoon (Reduced Calorie)
  Lemon juice 1 1⁄2 Teaspoon
  Bibb lettuce 4
Directions

Bring water to a boil, add shrimp, and cook 3 to 5 minutes.
Drain well, rinse with cold water.
Chill.
Peel and devein shrimp.
Combine shrimp, pineapple, mandarin oranges, celery, mayonnaise, and lemon juice, tossing gently, chill.
Serve on lettuce leaves, if desired.

if you add tobasco and curry to the mayo, that is the BEST salad in the world.....
