1. To make the dressing, mix the orange juice with the olive oil, salt and pepper to taste, the garlic and chopped mint.
2. Arrange the sliced avocado decoratively on 4 small plates with the orange segments, kiwi fruit slices and slivers of melon; arrange the cubes of smoked ham on top.
3. Spoon the prepared dressing over the arranged fruits and garnish each plate with a sprig of parsley.
