Avocado and Fruit Salad

  Orange juice 4 Tablespoon
  Olive oil 1 Tablespoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Garlic 1 Clove (5 gm), peeled and crushed
  Fresh mint 1 Tablespoon, chopped
  Avocado 1 Large, peeled halved, stoned and sliced
  Orange 1 Large
  Kiwi fruit 1 , peeled and sliced
  Melon 100 Gram
  Lean smoked ham 75 Gram, cut into small cubes
  Parsley sprig 1 (For Garnish)

1. To make the dressing, mix the orange juice with the olive oil, salt and pepper to taste, the garlic and chopped mint.
2. Arrange the sliced avocado decoratively on 4 small plates with the orange segments, kiwi fruit slices and slivers of melon; arrange the cubes of smoked ham on top.
3. Spoon the prepared dressing over the arranged fruits and garnish each plate with a sprig of parsley.
