Ich (Vegetarian Wheat Salad)

Ingredients
  Light olive oil 1 1⁄2 Cup (24 tbs)
  Onion 1 Large, chopped
  Tomato paste 3 Tablespoon
  Lemon juice 3⁄4 Cup (12 tbs)
  Water 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Hot red pepper 1 Teaspoon
  Bulgur 2 1⁄2 Cup (40 tbs) (Regular)
  Boiling water 3 Cup (48 tbs)
  Red and green bell pepper To Taste, slivered
  Parsley 1⁄2 Cup (8 tbs) (For Garnish)
Directions

In a heavy skillet, heat the oil and saute the onion until limp and translucent, but not browned.
Stir in the tomato paste, lemon juice, the one cup water, salt and red pepper.
Bring to boiling.
Stir in the bulgur, reduce heat, and simmer about ten minutes.
Adjust the seasoning.
Pour in the three cups boiling water.
Cook, stirring, for about five minutes.
Transfer to a serving dish.
Garnish with the red and green bell peppers and parsley.
Serve with chops or steaks.
