Marinated Herring Salad

Ingredients
  Smoked herring fillets 1⁄2 Pound, cut into strips
  Lemon juice 1 Tablespoon
  Oil 2 Tablespoon
  New potatoes 3 Cup (48 tbs), boiled and diced
  Celery 2 Bunch (200 gm), chopped
  Dessert apple 1 , chopped
  Mayonnaise 1⁄4 Cup (4 tbs)
  Corn kernels 1⁄2 Pound (Frozen And Thawed, Or Canned And Drained)
  Paprika 1 Pinch
  Lemon 1 , cut into wedges
  Salt To Taste
  Pepper To Taste
Directions

1 Place the smoked herring fillets in a shallow dish. Mix together the lemon juice and the oil. Pour over the fish.
2 Mix together the potatoes, celery and apple. Blend in the mayonnaise and season with salt and pepper.
3 Add the corn to the fillets and mix well.
4 Heap the mayonnaise mixture into the center of a flat serving dish. Sprinkle with the paprika. Surround with the herring fillets, and corn. Garnish with the lemon wedges.
