Marinated Herring Salad
|Smoked herring fillets||1⁄2 Pound, cut into strips|
|Lemon juice||1 Tablespoon|
|New potatoes||3 Cup (48 tbs), boiled and diced|
|Celery||2 Bunch (200 gm), chopped|
|Dessert apple||1 , chopped|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Corn kernels||1⁄2 Pound (Frozen And Thawed, Or Canned And Drained)|
|Lemon||1 , cut into wedges|
1 Place the smoked herring fillets in a shallow dish. Mix together the lemon juice and the oil. Pour over the fish.
2 Mix together the potatoes, celery and apple. Blend in the mayonnaise and season with salt and pepper.
3 Add the corn to the fillets and mix well.
4 Heap the mayonnaise mixture into the center of a flat serving dish. Sprinkle with the paprika. Surround with the herring fillets, and corn. Garnish with the lemon wedges.
