Chicken Salad In Cantaloupe Boats

Ingredients
  Cantaloupes 2 , chilled and halved
  Cooked chicken 2 Cup (32 tbs), diced
  Celery 1⁄2 Cup (8 tbs), diced
  Toasted slivered almonds 1⁄2 Cup (8 tbs)
  Mandarin oranges 1 Can (10 oz) (Drained)
  Mayonnaise 1⁄4 Cup (4 tbs)
  Sour cream 1⁄4 Cup (4 tbs)
  Grated lemon peel 1⁄2 Tablespoon
  Lemon juice 2 Teaspoon
  Chopped preserved ginger 2 Teaspoon
  Syrup 2 Teaspoon (From Ginger)
  Sugar 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
Directions

Scoop out cantaloupes and make balls of meat, saving shells for boats.
Add to chicken, celery, almonds, and oranges.
Chill.
Combine and mix mayonnaise, lemon peel, lemon juice, preserved ginger, syrup, sugar, and salt.
Mix with fruit mixture and pile into boats.
Garnish with mint or parsley.
