Creamy Frozen Fruit Salad
|Neufchatel cheese||8 Ounce, softened|
|Dairy sour cream||1 Cup (16 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Canned apricot halves||1 Ounce (1 Pound, Drained)|
|Canned crushed pineapple||8 3⁄4 Ounce (Drained)|
|Canned pitted dark sweet cherries||1 Pound (Drained)|
|Miniature marshmallows||1 Cup (16 tbs)|
In large mixer bowl, beat cheese until smooth.
Add sour cream, sugar and salt; blend on low speed.
Cut apricots in half.
Stir fruits and marshmallows into cheese mixture.
Pour into 4 1/2-cup mold or into 6 to 8 individual molds.
Freeze at least 8 hours.
Ten to 15 minutes before serving, remove mold(s) from freezer and let stand at room temperature.
If desired, garnish with stemmed dark sweet cherries.
