Chicken And Cucumber Salad With Minted Yogurt Dressing
|Plain yogurt||1 Cup (16 tbs)|
|Chopped mint||1⁄2 Cup (8 tbs)|
|Freshly ground pepper||1⁄4 Teaspoon|
|Cooked and cubed chicken||2 Cup (32 tbs)|
|Red onion||1 Small|
|Diced pineapple||1 Cup (16 tbs)|
1. In a medium bowl, combine yogurt, mint, salt, and pepper. Mix well. Add chicken and stir to blend. Cover and refrigerate 1 hour.
2. Add cucumber, red onion, and pineapple to chicken. Stir to combine. Garnish salad with mint sprigs.
