Fresh Butter Lettuce Salad

A salad that’s not only good for you but will get you in and out of the kitchen in practically no time. Plus it’s light texture blends perfectly with a cool glass of iced tea for those hot summer days.
Ingredients
  Butter lettuce head 1
  Avocado 1 , diced
  Oranges 2 , cut into bite sized pieces
  Feta cheese 4 Ounce, crumbled
  Pre roasted pistachios 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon
  Extra virgin olive oil 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
Directions

MAKING
To make the dressing:
1. In a bowl , combine extra virgin olive oil, lemon juice, salt and pepper. Whisk it up and keep it aside.
To make the salad:
2. Cut the roots of butter lettuce.
3. Tear the leaves of lettuce into the bowl which has the dressing. Toss it and transfer it into the serving dish.

SERVING
4. Layer with feta cheese, avocado, oranges and pistachios and your Fresh Butter Lettuce Salad is ready.

Butter lettuce contains lactucarium which has effects similar to those of opium. Because of its sedative properties, it is recommended for treating insomnia, intestinal spasms and palpitations. It is said that the emperor Domitian "tortured" his guests at banquets by serving them a head of lettuce at the beginning of the meal. Not allowed to nod off in front of his imperial majesty, they were forced to fight off their sleepiness for hours.
Many of you, might prefer a simple and light lunch instead of something heavy and elaborate. This fresh and crunchy butter lettuce salad, is definitely something light but fabulous to appreciate. It is super easy and loaded with nutrition. You can easily prepare it to substitute your lunch.
