Drain 12 canned peach halves thoroughly.
Arrange on salad greens and spoon 1 teaspoon of the 1/4 cup finely chopped, crystallized ginger into hollow of each peach.
Serve topped with dressing made by combining 1 cup sour cream with 2 tablespoons each maple blended syrup, lemon juice and brandy, stirring to mix well
