Avocado And Grapefruit Salad
|Chicory||1 Cup (16 tbs)|
|Olive oil/Salad oil||3⁄4 Cup (12 tbs)|
|Tarragon vinegar||1⁄4 Cup (4 tbs)|
|Dry mustard||1⁄2 Teaspoon|
Peel and section 3 grapefruit, placing any surplus juice in a small bowl.
Peel and slice 2 ripe avocados, dipping each slice into grapefruit juice to prevent discoloration.
Arrange grapefruit sections and avocado slices on bed of chicory which has been washed and thoroughly dried.
Combine 3/4 cup olive oil (or salad oil), 1/4 cup tarragon vinegar, 1 teaspoon sugar, 1/2 teaspoon each salt and dry mustard and 14 teaspoon each ginger and pepper.
Mix well and serve over salad.
