Salmon-Squash Salads

Ingredients
  Zucchini 1 Small
  Yellow summer squash 1 Small
  Celery stalks 2 Medium
  Onion 1 Small
  Sliced mushrooms 1 Cup (16 tbs)
  Canned salmon 15 1⁄2 Ounce
  Cherry tomatoes 12
  Lettuce cups/Lettuce leaves 3
Directions

Prepare Sesame Dressing.
Toss zucchini, summer squash, celery, onion and mushrooms.
Spoon into lettuce cups on each of 6 plates.
Place salmon chunks on center of vegetable mixture; top with 2 cherry tomatoes.
Spoon Sesame Dressing over salads.
