Bulgur-Tomato Salad

Ingredients
  Bulgur 1 Cup (16 tbs)
  Tomatoes 2 Medium
  Onion 1 Medium
  Snipped parsley 1⁄2 Cup (8 tbs)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Snipped mint 2 Tablespoon
  Olive oil/Vegetable oil 1⁄4 Cup (4 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Lettuce leaves 1 Cup (16 tbs)
Directions

Cover bulgur with cold water.
Let stand until bulgur is tender, about 1 hour; drain.
Mix bulgur, tomatoes, onion, parsley, green pepper and mint.
Sprinkle with oil, lemon juice, salt and pepper; stir until evenly coated.
Cover and refrigerate at least 2 hours.
Arrange lettuce leaves around bulgur mixture.
Garnish with mint leaves if desired.
