Herbed Tomato & Cheese Salad
|Lemon juice||3 Tablespoon|
|Cider vinegar||3 Tablespoon|
|Mozzarella cheese slices/Reduced fat, reduced sodium provolone cheese, cut into 1/2-inch cubes||1⁄4 Pound (1/2 Inch Thick)|
|Tomatoes||3 Cup (48 tbs), cut into 3/4-inch cubes (3 Medium, Seeded)|
|Zucchini||2 Cup (32 tbs), cut into 1/4-inch slices (2 Small)|
|Chopped basil||2 Tablespoon (Fresh)|
Combine sugar, lemon juice and vinegar in small bowl.
Combine all remaining ingredients in large bowl. Pour vinegar mixture over vegetables and cheese; mix lightly. Cover; refrigerate at least 2 hours.
