Curry-Lobster-Potato Salad

Ingredients
  Diced peeled boiled potatoes 4 Cup (64 tbs)
  Canned lobster 5 Ounce
  Sliced celery 1⁄4 Cup (4 tbs)
  Snipped parsley 3 Tablespoon
  Chopped green pepper 2 Tablespoon
  Sliced green onion 2 Tablespoon
  Mayonnaise/Salad dressing 3⁄4 Cup (12 tbs)
  Lemon juice 2 Tablespoon
  Curry powder 1⁄4 Teaspoon
  Lettuce 1
  Hard boiled eggs 1
Directions

Combine potatoes, lobster, celery, parsley, green pepper, and green onion; toss lightly.
Blend together mayonnaise, lemon juice, 1/2 tea spoon salt, and curry; fold into potato-lobster mixture.
Pack into an 8 1/2x41/2x21/2-inch loaf dish; chill.
Unmold on lettuce-lined plate; garnish with hard-cooked egg wedges.
