Green Beans With Quinoa Dates And Almonds - Vegan

This dish can be served as a salad or a side dish. It is a great alternative for string bean casserole as it is very light, the beans are crisp and it is good for you! Enjoy!
Ingredients
  Green beans 10 Ounce (fresh or frozen baby beans)
  Sliced almonds 1⁄2 Cup (8 tbs)
  Cooked quinoa 3 Cup (48 tbs) (which is 3/4 cup of raw quinoa)
  Sliced dates 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon
  Olive oil 2 Tablespoon
  Salt To Taste
Directions

MAKING
1. In a large pot, bring salted water to a rolling boil. Add beans and cook for 5-6 minutes if using fresh or 3-4 minutes if frozen. Do not overcook.
2. Remove beans from boiling water and immediately drop them in iced water. Let cool and then cut into 3 parts.
3. In a dry skillet, toast almonds for 2-3 minutes, constantly shaking the pan.

FINALIZING
4. In a large bowl, combine cooked quinoa, green beans, almonds, and dates. Add lemon juice, olive oil, and salt. Toss well.

SERVING
5. Serve and enjoy!
