Ingredients
  Tomatoes 3 Medium, thinly sliced
  Vidalia onions 3 Medium, thinly sliced
  Salt 1 Teaspoon
  Dried basil 1 Teaspoon
  Freshly ground pepper 1 Teaspoon
  Olive oil 6 Tablespoon
  Cognac 2 Tablespoon
  Chopped parsley 2 Tablespoon
Directions

Arrange tomato and onion slices on serving platter, overlapping edges.
Combine next 5 ingredients; stir well.
Spoon over tomatoes and onions; sprinkle with parsley.
Chill 1 to 2 hours.
