Jellied Salads (Waldorf-Cider Salad)
|Lemon juice||2 Tablespoon|
|Apple cider||1 3⁄4 Cup (28 tbs)|
|Diced celery||3⁄4 Cup (12 tbs)|
|Diced apricots/Canned apricots||1⁄2 Cup (8 tbs)|
Soften gelatine in lemon juice.
Heat cider to boiling, and dissolve gelatine in it.
Stir in salt, and cool until slightly thickened.
Core and dice unpeeled apple.
Fold apple, celery and apricots into gelatine mixture.
Rinse 6 individual molds with cold water, and fill with mixture.
Chill until firm, and serve unmolded on greens.
Serve with Mayonnaise or with equal parts Mayonnaise and commercial sour cream beaten together.
