Green Rice Salad With Tomatoes

Ingredients
  Uncooked rice 1 1⁄2 Cup (24 tbs)
  Olive oil 4 Tablespoon
  Wine vinegar 2 Tablespoon
  Black pepper 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Tarragon 1⁄2 Teaspoon
  Cucumber 1⁄2 Cup (8 tbs)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Chopped parsley 1⁄4 Cup (4 tbs)
  Chopped chives 1⁄4 Cup (4 tbs)
  Chopped green onion 1⁄4 Cup (4 tbs)
  Mayonnaise/Salad dressing 1⁄4 Cup (4 tbs)
  Salad greens 1⁄4 Cup (4 tbs)
  Hard cooked eggs 2
  Sliced ripe tomatoes 3
Directions

Boil rice according to directions on package.
Drain, and mix at once with olive oil, vinegar, black pepper, salt and tarragon.
Let stand to cool.
Then mix with cucumber, green pepper, parsley, chives and onion.
Mix in mayonnaise to moisten.
Taste for seasoning.
Heap on greens, and garnish with eggs and tomatoes.
