Green Rice Salad with Tomatoes
|Uncooked rice||1 1⁄2 Cup (24 tbs)|
|Olive oil||4 Tablespoon|
|Wine vinegar||2 Tablespoon|
|Black pepper||1⁄2 Teaspoon|
|Cucumber||1⁄2 Cup (8 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|Chopped chives||1⁄4 Cup (4 tbs)|
|Chopped green onion||1⁄4 Cup (4 tbs)|
|Mayonnaise/Salad dressing||1⁄4 Cup (4 tbs)|
|Salad greens||1⁄4 Cup (4 tbs)|
|Hard cooked eggs||2|
|Sliced ripe tomatoes||3|
Boil rice according to directions on package.
Drain, and mix at once with olive oil, vinegar, black pepper, salt and tarragon.
Let stand to cool.
Then mix with cucumber, green pepper, parsley, chives and onion.
Mix in mayonnaise to moisten.
Taste for seasoning.
Heap on greens, and garnish with eggs and tomatoes.
