Curried Chicken Salad
|Chopped water chestnuts||1⁄2 Cup (8 tbs)|
|Diced cooked chicken||4 Cup (64 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Diced green pepper||1⁄2 Cup (8 tbs)|
|Mayonnaise||2⁄3 Cup (10.67 tbs)|
|Light cream||2 Tablespoon|
|Curry powder||1 Teaspoon|
|Pickled peaches/1/2 cup apple jelly||6|
Chop water chestnuts coarsely.
Combine with chicken, celery and green pepper.
Blend Mayonnaise, cream, vinegar, salt and curry powder, and combine with chicken mixture.
Chill until serving time.
Serve in lettuce cups on individual salad plates.
Garnish with peaches.
