Shredded Turnip Slaw

The Natural Princess brings the often overlooked, under-appreciated turnip into the kitchen for a makeover. A little bit sweet and a little bit tangy, this shredded turnip slaw is an easy, delicious way to introduce the turnip to your table.
Ingredients
  Turnip 1 Medium, shredded
  Carrots 2 Medium, shredded
  Green apple 1 Medium, shredded
For the dressing
  Grape seed oil 2 Tablespoon
  Apple cider vinegar 2 Tablespoon
  Maple syrup 1 Teaspoon
  Dry basil 1⁄4 Teaspoon
  Salt 1 Pinch
  Pepper 1 Pinch
Directions

GETTING READY
1. Take the turnip, trim the ends, peel it and set aside.
2. Take the carrots, trim the ends, and if scrubbed well it is not required to peel them.
3. Remove the core of the green apple and set aside unpeeled.

MAKING
4. Using a food processor shred the turnip, carrots and the green apple. Set aside in a mixing bowl.
To prepare the dressing:
5. In a bowl, add grape seed oil, apple cider vinegar. maple syrup and dry basil.
6. Season it with a little salt and pepper and whisk it all together.
7. Pour the prepared dressing into the bowl of shredded vegetables. Toss it all together, making sure that all the vegetables are well coated with the dressing. Let it rest for about 5 to 10 minutes before serving.

SERVING
8. Serve the shredded turnip slaw fresh.

TIPS
To shred the vegetables, you can use a food processor, or a box grater.
