Fresh Vegetable Relish Or Salad

Ingredients
  Tomatoes 2 Medium
  Green pepper 1 Large
  Cucumber 1⁄2 Large, peeled
  Celery ribs 2
  Onion 1 Medium
  Zucchini 1 Medium
  Sugar 1⁄2 Cup (8 tbs)
  Cider vinegar 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

Peel and seed tomatoes and dice into small pieces. Chop vegetables. You should have about 2 cups tomato and 1 cup each of green pepper, cucumber, celery, onion, and zucchini. Shake in a jar the sugar, vinegar, salt, and pepper. Pour over vegetables and stir gently. Cover and refrigerate for 4 hours or overnight. At serving time, remove vegetables with a slotted spoon to a serving bowl. Season with more salt and pepper, if needed. Discard liquid.
