This homemade Rotisserie Chicken Salad is low carb and Atkins Induction Friendly. The longer it sits in the refrigerator the better it taste.

Onions | 2 Tablespoon , minced | |
Fresh parsley | 2 Tablespoon , minced | |
Black olives | 1 Tablespoon , sliced thinly | |
For the dressing | ||
Cream cheese | 2 Ounce , softened | |
Mayonnaise | 1 Cup (16 tbs) | |
Heavy cream | 1 Tablespoon | |
Lemon juice | 2 Teaspoon | |
Black pepper | 1 Teaspoon , grounded | |
White pepper | 1 Teaspoon , grounded | |
Paprika | 1 Teaspoon | |
Onion powder | 1 Teaspoon | |
Garlic powder | 1 Teaspoon | |
Sriracha | 1 Teaspoon |
MAKING
1. In a medium bowl add in cream cheese, mayonnaise, heavy cream, lemon juice, black pepper, white pepper, paprika, onion powder, garlic powder and sriracha. Mix well with whisker and set aside.
2. In a large bowl add in the chicken, celery stalk, onions, fresh parsley and black olives. Mix well.
3. Add in the dressing into the chicken mixture. Combine all the ingredients well and place in refrigerator for 30 minutes.
SERVING
4. Place greens over the croissants and top with chicken salad. Serve with pickled cucumber and enjoy!
