New Potato Salad With Dressing

|Chopped pimiento||1 Tablespoon|
|Leaf lettuce||1 Cup (16 tbs)|
|New potatoes||1 1⁄2 Pound (Small Sized)|
|Italian reduced calorie salad dressing mix||1 1⁄3 Ounce|
|Thinly sliced celery||1⁄2 Cup (8 tbs), thinly sliced|
|Minced green onions||3 Tablespoon, minced|
|Minced parsley||3 Tablespoon|
|Chopped pimiento||1 Tablespoon, chopped|
|Lettuce||1 Tablespoon, chopped|
Cook potatoes in boiling water 10 to 15 minutes or until tender; drain and cool.
Cut potatoes into 1/4-inch slices; layer in a shallow serving dish.
Prepare salad dressing mix according to package directions; combine salad dressing and next 4 ingredients.
Pour evenly over potatoes; cover and chill the salad thoroughly.
Serve on lettuce leaves.
