Raw Holiday Salad

It's crunchy, sweet, and creamy, and it hits every taste bud, keeping you in a state of smiling bliss! Ingredients
For the salad
  Cauliflower head 2 Large
  Red bell pepper 1 Large
  Green bell pepper 1 Large
  Yellow bell pepper 1 Large
  Cherry tomatoes 1 Carton (1 l)
  Jicama 1 Large
  Cucumbers 3 Small
  Celery head 1 Large
  Red onion 1⁄2 Medium
  Green onions 1 Bunch (100 gm)
  Dill 1⁄2 Bunch (50 gm)
  Chives 1⁄2 Bunch (50 gm)
For the dressing
  Zucchinis 3
  Avocados 1
  Pine nuts 1⁄4 Cup (4 tbs) (Less than a Quarter Cup)
  Fresh dill 1 Bunch (100 gm)
  Cumin powder 1 Pinch
  Garlic 1 Clove (5 gm) (Optional)
  Lemon juice 3 Medium
Directions

GETTING READY
1. For the salad: On a chopping board, finely chop the celery head, cucumbers, bell peppers, jicama, onions, green onions, chives, dill and set aside.
2. Take the cauliflower heads and cut them in half.
3. In a food processor, add chopped pieces of one cauliflower head and blend until creamy and smooth.
4. Take the other cauliflower head and chop it into fine pieces using a sharp knife and set aside.

MAKING
5. In a large mixing bowl, add the finely chopped cauliflower, blended cauliflower followed by finely chopped celery head, cucumbers, bell peppers and toss well.
6. Add the finely chopped jicama, onions, green onions, chives, dill and cherry tomatoes. Mix until well combined.
7. For the dressing: In a blender, add the zucchinis, garlic, cumin powder, dill, lemon juice, avocado and pine nuts. Blend the mixture until smooth and creamy.

FINALIZING
8. Pour the dressing over the salad and toss until well combined.

SERVING
9. Serve this raw holiday salad in small serving bowls.
