Black Bean and Corn Salad

SaludNapa's picture
I love making this simple black bean and corn salad during the summer months as it's both refreshing and savory and super easy to prepare. You can also serve it as a salsa by digging in with chips or tostadas. Never forget to pair it with a chardonnay or rosé.
Black bean 2 Can (20 oz), drained
White corn 1 Cup (16 tbs)
Roma tomatoes 2 Medium, finely chopped
  White onion 1 Medium, chop
Red bell pepper 1 Medium, chop
Cilantro 1⁄2 Cup (8 tbs), chop
  Lime 1 Medium, juiced
  Olive oil 1 Tablespoon
  Jalapeno pepper 1 Medium, chop
  Jalapeno pepper vinegar 2 Tablespoon
  Serrano pepper 1 Medium, chop
  Salt 1 Dash
  Pepper 1 Dash
  Cumin powder 1 Teaspoon

1. In a bowl, add black beans, white corn, roma tomatoes, white onions, red bell pepper, cilantro, lime juice, olive oil, jalapeno pepper, jalapeno pepper vinegar, serrano pepper, salt, pepper and cumin.
2. Toss all the ingredients well together.

3. Plate and serve a refreshing side dish or appetizer.
