Orange Pear Salad
|Canned pear halves||16 Ounce|
|Lemon flavored gelatin||6 Ounce|
|Whipping cream||1 Cup (16 tbs)|
|Sour cream||8 Ounce|
|Canned mandarin oranges||11 Ounce|
Drain pears, reserving liquid.
Add water to liquid to measure l3/4 cups.
Slice pear halves lengthwise into 4 slices, and set aside.
Bring pear juice mixture to a boil; add gelatin, stirring until dissolved.
Combine whipping cream and sour cream; add to gelatin mixture, blending well.
Chill until consistency of unbeaten egg white.
Arrange pear slices and mandarin oranges attractively on bottom of a lightly oiled 9-inch quiche dish; spoon gelatin mixture over fruit.
Chill until firm.
Unmold on serving platter; garnish with kiwi and additional mandarin oranges, if desired.
