Cheesy Luncheon Salad
|Italian salad dressing||1⁄2 Cup (8 tbs)|
|Water||3⁄4 Cup (12 tbs)|
|Uncooked instant rice||1 Cup (16 tbs)|
|English peas||17 Ounce|
|Sliced pimiento stuffed olives||1⁄4 Cup (4 tbs)|
|Peeled diced cucumber||1⁄4 Cup (4 tbs)|
|Shredded cheddar cheese||4 Ounce|
|Hard cooked eggs||1|
Combine 1/4 cup dressing and water in a medium saucepan; bring to a boil.
Stir in rice; cover and remove from heat.
Let stand 5 minutes.
Combine rice, remaining 1/4 cup dressing, and next 5 ingredients.
Cover and chill.
Serve salad on lettuce; garnish with egg slices.
