This salad is so great, everyone at the table just can't get enough of it. For once you will be worried about people getting filled up on salad! Arugula Salad is healthy, simple & delicious. A triple treat in our or so busy lives when many times we are too much in a hurry to make the proper food choices. Some shaved parmesan makes this salad even better!
5 Ounce (Fresh)
1⁄2 Large, juiced (about 1 1/2 tablespoons of lemon juice)
White wine vinegar
1 Tablespoon (Italian Classics)
Extra virgin olive oil
1⁄4 Cup (4 tbs) (Italian Classics)
Cracked black pepper
1. Rinse arugula and pat dry or dry in a salad spinner.
2. Add lemon juice and 1 Tbsp vinegar to a small bowl. Whisk while drizzling in 1/4 cup olive oil. Season with salt and pepper.
3. Add dressing to arugula in a salad bowl. Toss well. Adjust seasoning to taste.
4. Serve as a side to any meal. This is a great alternative for the mundane house salad.
Serve with shaved Parmigiano-Reggiano or Asiago Cheese if not vegetarian or dairy intolerant.
You can use a prepared Lemon Vinaigrette Dressing as a time-saving option.
You can add grilled chicken and veggies and turn the salad into a meal.
Add fruit and nuts for a festive salad.
