Spinach Salad with Orange Ginger Sauce

Ingredients
  Baby spinach leaves 2 Cup (32 tbs), washed
  Dried cranberries 1⁄2 Cup (8 tbs)
  Walnuts 1⁄2 Cup (8 tbs), candied
  Salt To Taste
Ginger orange dressing
  Carrot 1 Cup (16 tbs), peeled
  Orange 1 Medium, cut into pieces with skin
  Lemon 1⁄3 Medium, with skin
  Fresh ginger 2 Tablespoon, peeled
  Olive oil 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1. In a blender, add carrot, orange, lemon, fresh ginger, olive oil and blend till smooth. Set aside.

MAKING
2. In a bowl, put spinach leaves, cranberries, walnuts and ginger orange dressing. Season with salt and toss till mixed.

SERVING
3. In a serving plate, serve the salad with some crusty bread or as it is.

TIPS
If the salad is dry to your taste, then add olive oil or orange juice.
