This Pear and Fennel Salad features an apple butter vinaigrette and is very simple to put together. The flavor of the fennel and ripe pear is bright and fresh, just like Spring. This salad goes very well with grilled meat or fish, which is a bonus since grilling season is upon us once again.
1 Large, sliced thinly (Discard the green stalks)
2 , julienned (Ripe Barlett pear, and 1 thinly sliced)
For the dressing
Juice of lemon
1⁄2 , juiced
Extra virgin olive oil
1 1⁄2 Teaspoon
Salt and pepper
1. In a small container add the ingredients for the dressing and shake well to combine.
2. In a large mixing bowl combine the fennel, julienned pear and the dressing. Toss until combined well.
3. When plating the salad, top it with some of the sliced pear, fresh oregano leaves and lemon zest.
