Tony Caputo's Leek And Scallop Salad

Here’s an incredibly tasty salad. It’s very easy to make and will be loved by your family and friends.
Ingredients
  Leek 1 Bunch (100 gm)
  Sea scallops 11 Large
  Olive oil 1 Tablespoon
  Regular salt 1 Teaspoon
Directions

GETTING READY
1. Slit the leek lengthwise and place it under a tap of running cold water to wash and remove all grit. Dry well on a kitchen towel and then slice/shred thinly.
2. Put sliced leek in a colander and sprinkle salt over it. Leave it to rest for an hour.

MAKING
3. Heat olive oil in a saute pan over medium high until smoking hot
4. Arrange the scallops in the pan and sear them for 30 seconds of so on each side.

SERVING
5.Place the seasoned leeks on a plate and arrange the seared scallops on top.
