  Watermelon 2 Cup (32 tbs), cubed
  Cucumber 1 Large, thinly sliced
  Tomato 1 , cubed
  Scallions 3 , cubed
  Parsley 1 Cup (16 tbs), chop
  Lemon juice 3 Tablespoon
  Sea salt 1 Teaspoon
  Ground pepper 1 Teaspoon
  Olive oil 2 Tablespoon

1. In a bowl, add the watermelon, cucumber, tomato, scallions and parsley.
2. Add lemon juice, ground pepper, olive oil and salt and toss.

3. Plate and serve as a side dish or appetizer.
