Tabouli (Cracked Wheat) Salad

Ingredients
  Bulgur/Cooked cracked wheat 2 Cup (32 tbs)
  Chopped parsley 1⁄4 Cup (4 tbs)
  Garlic 1 Clove (5 gm)
  Chopped mint 1 Tablespoon
  Olive oil/Other oil 1⁄3 Cup (5.33 tbs)
  Tomatoes 2 Medium
  Diced green pepper 3⁄4 Cup (12 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Soy sauce 1 Tablespoon
Directions

Soak bulgur in water 20 minutes; drain well. Or use cold cooked cracked wheat. Combine all ingredients. Toss lightly, and serve with soy sauce, as desired.
