Couscous And Chicken Salad

Ingredients
  Spinach leaves 200 Gram
  Couscous 1 Carton (1 l), cooked, drained
  Olive oil 2 Teaspoon
  Salt 1 Teaspoon (to taste)
  Pepper 1 Teaspoon (to taste)
  Chicken 1 Pound, cooked and shredded
  Cucumber 1 , diced
  Canned garbanzo beans 1 Can (10 oz)
  Kalamata olive 1 Cup (16 tbs)
  Black olives 1 Can (10 oz)
  Roasted red bell peppers 1 Medium, chop
  Dill leaf 1 Tablespoon
  Fresh basil leaves 1 Tablespoon
  Red wine vinegar 1 Tablespoon
  Lemon 1 , juice extracted
  Oregano 1 Tablespoon (Leveled)
  Extra virgin olive oil 2 Teaspoon
  Feta cheese 1 Cup (16 tbs), grated
Directions

GETTING READY
1. Sprinkle olive oil, salt and pepper on couscous. Keep it aside.

MAKING
2. In a large bowl, combine washed spinach, couscous, and chicken.
3. Add cucumber, garbanzo beans, kalamata olives, and black olives.
4. Add roasted bell pepper, dill, and basil.
5. Pour red wine vinegar, lemon juice, and extra virgin olive oil in it.
6. Add oregano, feta cheese, salt, and pepper. Toss to combine.

SERVING
7. Serve salad with a glass of wine.

TIPS
You may simply add shredded chicken or sear it.
Use your favourite olives, any one which you like the best.
