This is Jon Ham and Julieanna Hever creating Jon's Rainbow Salad - a healthy combination for your healthy lifestyle. It is a super easy recipe to make, consisting of Red, Orange, Yellow, and Green bell peppers, grape tomatoes, Persian Cucumbers, garbanzo beans, and Balsamic Vinegar. It is easy, quick, healthy, and loaded with nutrients, antioxidants, vitamins, and minerals. Each color represents a different nutrient, which is why you want to eat the full spectrum of colors of the rainbow each day.
Ingredients
  Red bell pepper 1 , cubed
  Orange bell pepper 1 , cubed
  Yellow bell pepper 1 , cubed
  Green bell pepper 1 , cubed
  Grape tomato 1 Can (10 oz), whole (can cube them)
  Persian cucumber 2 , cubed
  Garbanzo bean 1 Can (10 oz), washed, drained
  Balsamic vinegar/Lemon juice 5 Tablespoon
  Salt 1 Teaspoon
  Pepper/Mixed herbs 1 Teaspoon
  Basil 3 Tablespoon, chop
Directions

GETTING READY
1. In a bowl, add the chopped red bell peppers, orange bell peppers, yellow bell peppers, green bell peppers, persian cucumbers, grape tomatoes and garbanzo beans.
2. Next, add the balsamic vinegar, fresh chopped basil, salt and pepper and toss everything well together.

SERVING
3. Plate and serve as a side dish or appetizer.
