cookingwithtse's picture
Quinoa is a grain and is often thought to be related to the wheat family, but it is actually related to beets and spinach! This full meal salad serves two as a main course or four as an appetizer, just add a couple more lettuce leaves. It is a healthy, gorgeous and satisfying salad that is going to keep you going throughout the day. Make it the night before and take it for to work the next day for lunch. Look for quinoa in the bulk section of your grocery store. That way you buy just what you need and it's a lot less expensive.
  Quinoa 1 Cup (16 tbs)
  Water 1 Cup (16 tbs)
  Coriander powder 1 Teaspoon

  Avocado 1 Small, diced
  Fresh cilantro 4 Tablespoon, chopped

6. Spoon the salad into lettuce leaves and serve.
